Spicy Grilled Chicken Wings with Two Dipping Sauces

Grilled chicken wings tossed in a spicy chipotle sauce and served with two different dipping sauces. A simple mixture of Greek yogurt and blue cheese crumbles create a sauce that cools the heat of the wings. A mixture of chipotle, honey, spices, and sour cream combine to create a sauce that turns up the heat of the wings.

Ingredients
  • 4 pounds chicken wings
  • 4 tablespoons olive oil
  • 2 teaspoons adobo sauce
  • salt and fresh ground pepper
For the Wing Sauce
  • ¼ cup red wine vinegar
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 1 tablespoon adobo sauce
For the Chipotle Honey Dipping Sauce
  • 2 chipotle peppers
  • 3 tablespoons honey
  • 2 cups sour cream
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
For the Blue Cheese Dipping Sauce
  • 1-1/2 cups plain Greek yogurt
  • 4 ounces blue cheese crumbles
  • salt and fresh ground pepper
Instructions
  1. Heat the grill on high.
  2. Toss the chicken wings in the olive oil and adobo sauce. Season with the salt and pepper. Place the wings on the grill in the a single layer. Grill until golden brown on both sides and cooked through, about 4 to 5 minutes on both sides. Remove the wings from the grill and let cool for 2 minutes.
  3. Whisk together the vinegar, olive oil, honey and adobo sauce. Pour the Wing Sauce over the wings and toss to coat.
  4. Serve with the Chipotle Honey Dipping Sauce and the Blue Cheese Dipping Sauce.
For the Chipotle Honey Dipping Sauce
  1. Put the chipotle peppers and honey into a blender and puree until smooth. Add the sour cream, garlic powder, paprika, and chili powder. Blend until all ingredients are combined. Pour the dipping sauce into a medium bowl, cover, and refrigerate for at least 30 minutes.
For the Blue Cheese Dipping Sauce
  1. Combine the blue cheese crumbles and yogurt in a medium bowl. Season with salt and pepper to taste. Cover and refrigerate for at least 30 minutes.
