Happy Wednesday! My week is kind of hectic and crazy so my meals have been all about the quick fixes. Simple things that take little or no time to prepare. This week’s edition of What I Ate Wednesday is all about the quick fixes that helped me get through my Tuesday.
Breakfast – 9:30 AM
For breakfast, I decided to make my version of “overnight oats”. Since I was out of yogurt, I needed something that would be simple for me to grab. I whipped up this delicious meal in two minutes flat and let it sit while I finished getting ready for work. I added the granola just before leaving for work so that it would remain crunchy. The ingredients include:

3/4 cup oats

1/8 teaspoon cinnamon
-
1 cup vanilla almond milk

1/2 cup granola
I also enjoyed a large cup of pumpkin spice coffee with cream.
Lunch – 1:00 PM
Busy day at work means that lunch was later than usual. I grabbed a small garden salad with balsamic vinaigrette dressing and Italian wedding soup. The salad came from the café on the first floor of the office building. The soup was something that I had at my desk in case of emergencies.
Afternoon Snack – 4:00 PM
The holiday season is officially upon us. I just found Clif Bars this year so I have never known the joy of their seasonal flavors. No joke this flavor was amazing! I will totally be looking for more peppermint stick Clif Bars! ![]()
I also took an afternoon break from work and grabbed an iced coffee with 2 pumps of pumpkin spice and cream.
Dinner – 8:00 PM
I was a little late getting home from work. By the time I finished my kettlebell workout, I decided to throw together a quick and easy salad. The ingredients are:

2 cups spinach

1/2 cup diced tomatoes

2 veggie burgers (I chose Morningstar Farms Grillin’ Turkey burgers)

1/4 cup fat free shredded mozzarella cheese
-
2 tablespoons fat free balsamic vinaigrette dressing
Evening Snack – 11:00 PM
I don’t normally like too eat so late but I was trying to get caught up on all things blog related.
Tonight I chose to have a whole wheat bagel thin with pumpkin butter. I also had a dark chocolate calcium supplement.

All very delicious. Funny, I almost bought that flavor Clif bar. Now I know I am going back! Mmm… iced coffee. Hey, is that chocolate I see in this morning’s oatmeal. I say Kudos to WIAW post!
That is actually chocolate delight granola in my oatmeal! I LOVE chocolate and couldn’t resist giving my oatmeal a little extra crunch with the granola. It was really yummy! That Clif Bar was amazing. It was better than the Cool Mint Chocolate flavor that they make.
I haven’t seen the peppermint stick Clif bars…I Need Them NOW!!
